About this recipe

feel the fall season with this filipino version of the classic pumpkin pie.

Ingredients

Crust

3/4 cup all-purpose flour
1 tbsp cornstarch
1/3 cup confectioner's sugar, sifted
1/2 tsp kosher salt
6 tbsps butter, cold, cut into 1/2 inch cubes

Filling

2 2/3 cups kalabasa, in 1/2 inch cubes, boiled until completely cooked
2 eggs
2 yolks
2/3 cups Alaska Sweetened Condensed Filled Milk
3 tbsps Alaska Evaporated Filled Milk
2 tbsp muscovado sugar
1 tsp cinnamon
1/2 tsp nutmeg
14 tsp cloves
1/4 salt

Whipped Cream

1 pack Alaska Crema All-Purpose Cream, chilled, whipped to firm peaks
3-4 tbsps Alaska Sweetened Condensed Filled Milk

Procedure

Tick the circle to once you're done with the procedure.

boil the large diced squash and mash while it is still warm. set aside to cool.
for the crust, combine the all-purpose flour, cornstarch, sifted confectioner's sugar, and ½ tsp salt in a large bowl using whisk.
add cold butter and mash it into the mixture with your hands until a dough forms.
press the dough into the bottom of a 9x9 pan lined with parchment paper.
preheat the oven to 350f and bake for 10-15 minutes until crust turns to a light gold.
while crust is baking, combine the eggs, egg yolks, mashed squash, alaska sweetened condensed filled milk, alaska evaporated filled milk, cinnamon, nutmeg, cloves, and ¼ tsp salt.
Once crust is done baking, remove from oven and pour the filling into the crust.
bake filling for an additional 18-25 minutes or until the center jiggles slightly when the pan is shaken. set aside to cool completely.
(optional) top with whipped alaska crema all-purpose cream sweetened with 3-4 tbsp of alaska sweetened condensed filled milk.
