Fluffy Puto Batter

1.5 cup All Purpose Flour
3/4 cup Sugar
1.5 tbsp Baking Powder
1.5 tbsp Vegetable Oil
1 can Alaska Evaporada
1 pc Egg
1 pc Egg Yolk

Pares Ingredients

1/2 kg Beef brisket (small cubes)
1 cup Soy sauce
4 cups Water
4 cloves Garlic
3 pcs Star Anise
1/2 cup Sugar
1/2 pc Beef Cubes
as needed Cornstarch

Procedure

Method

Cook pares ahead by combining all the ingredients in 1 pot. Cook in medium fire until beef is tender. Add water if necessary. Thicken sauce if needed. Set asid eand let cool.
Pour 1/8 cup of puto base batter into medium size puto molds.
Put 2-3 pcs of pares meat with sauce. Cover again with the batter until the molds are about ¾ full.
Steam for 10-11 minutes.
Let cool and remove from molds. Serve immediately.

Cooking Tip

You can use leftover ulam (preferably stewed meat such as menudo, kaldereta, adobo, etc.) as filling to replace the pares.

Fluffy Puto Batter

In a bowl, combine sifted All purpose flour, Sugar, and Baking powder. Mix well until well combined.
In a separate bowl, combine oil, Alaska Evaporada and Eggs. Mix until smooth and free from lumps.
Slowly pour wet ingredients into the dry ingredients. Mix until resulting batter is smooth and free of lumps.
Pour into puto molds and steam for 10 minutes. Remove, let cool, and serve.

Cooking Tips : Fluffy Puto Batter

Sift ingredients for a smoother batter.
Wrap steamer lid with a clean cloth to prevent water from dripping on the puto.
Do not exceed 12 minutes when steaming your puto to prevent it from being overcooked.
Use Alaska Evaporada instead of water to give you a creamier and milkier puto!
