Ingredients

3 cups Grated Cassava
1 1/2 cups White Sugar
1 can Alaska Evaporada
1 tsp Lye Water
1 tsp Pandan Flavoring
1 tsp Green Food Color

Topping

2 cups Niyog
1/2 cup White Sugar
1/8 cup Toasted Sesame Seeds

Procedure

Method

In a bowl, mix all ingredients until well incorporated. Place the resulting batter in greased puto molds.
Steam for 30-40 minutes over medium high heat. Once the pichi-pichi has set, remove from steamer and let cool.
In a small bowl, mix all topping ingredients until well incorporated.
Remove Pichi-pichi from the molds and place them on a plate. Sprinkle with the topping and enjoy!

Cooking Tip

Replacing water with Alaska Evaporada gives the pichi-pichi a creamier texture.
For a richer taste, soak cassava in Evaporada for at least an hour prior to cooking.
